Aged for a minimum 4 months, Žigljen (ž = s, as in pleasure ‘s - ig – lee – en’) is an excellent and original blend of Dalmatian cow (80%) and sheep (20%) milk. The deep yellow rind gives way to an almost granular texture with an intense and complex flavour with a slightly spicy finish.

Background

A personal creation of Ivan Gligora, who in the early days of Sirana Gligora would buy continental cow milk to mix with Pag milk when he couldn’t source enough for the production of Paški sir – Thus a new cheese was born and named after the ferry port from Pag to mainland Croatia. Today both the sheep and cow milk come from family farms in the Zadar hinterland. Crowned as the best mixed milk cheese in the world in 2012 with a Super Gold Medal from the World Cheese Awards, UK.
