Our select Dalmatian cow milk cheese is pressed and aged coated with fresh wild rosemary leaves from Dalmatian coastal regions. During the 2 months of aging, the cheese takes on the bite of the fresh herbs to leave the most exceptionally buttery, slightly salty, herbivorous cheese that you will ever have the pleasure of tasting.
Produced along side Sir s Tartufima in 2011 but longer in development until we could find the right rosemary supplier along the Dalmatian coast. You’ll see from the taste that it was well worth to wait.
