Try Žigljen with Seasonal Baked Potato and Broccoli

A truly delicious hard cheese that was voted as the Best Mixed Milk Cheese in the World (2011 Super Gold Winner, World Cheese Awards) made from mixed sheep and cow milk secured from family farmers in the Zadar hiterland, an area of outstanding natural beauty which transcends into the taste of this stunning cheese.

Fist produced by Sirana Gligora in 1995, our Žigljen cheese is a personal creation of founder and master cheesemaker Mr Ivan Gligora who when couldn’t procure enough Island of Pag sheep milk for Paški sir production, mixed it instead with cow milk from the mainland to create what has become one of our leading cheeses.

Our new batch of Žigljen has been in production since last Autumn and after rigorous taste tests, which wasn’t such a difficult task to carry out, our 2014 Žigljen will be on sale in all Sirana Gligora cheese shops from 01.04.2014

Melted Žigljen Baked Potatoes With Broccoli

Serves 4

Preparation time: 15 mins

Cooking time: 1 hr 15 mins


  • 4 large potatoes
  • 2 cups small broccoli florets
  • 8 spring onions, thinly sliced
  • 300 g Žigljen, grated
  • 40 g butter
  • 40 g flour
  • 225 ml milk
  • salt, black and cayenne pepper


Preheat the oven to 180°C.  Scrub clean the potatoes and pierce with a fork several times.  Rub with sea salt (this will make the skin nice and crispy) and place on a baking tray in the oven.  After 30 mins, increase the heat to 220°C and cook for a further 45 mins. Remove and cool for 5 mins.

While the potatoes bake, bring a pot of salted water to the boil.  Add the broccoli, stems down with the water level no higher that halfway up the floret and cook for just a few minutes, remove, drain and set aside.

While the potatoes are cooling make the cheese sauce.

Melt the butter in a pan and add the flour, mix until it is completely blended with the butter.

Now add the milk and stir constantly until the mixture thickens.

Season to taste.

Now add the grated Žigljen, keep stiring until completely melted then fold in the broccoli.

To serve

Slice open each potato and spoon in the Žigljen sauce, top with the chopped spring onions and serve.
